A traditional Greek recipe for green beans and other items in the box today adapted by subscriber Athena R.
Trim 1/2 lb. green beans and cut in half.
Finely slice onions to make 1 1/2 C. Mince 2 cloves of garlic.
Dice 4 potatoes.
Heat 1/2 C. olive oil in a dutch oven and saute the onions and garlic until they are golden brown. Add the potatoes and green beans and saute until they are well-coated in oil. Sprinkle with salt and pepper.
Dice tomatoes to make 2 C. and add to the pot. Simmer on high until they are bubbling. (Optional: add 1/2 C. chopped basil leaves). Lower heat and cover.
Cook for 30 minutes or until the beans and potatoes are tender. Taste and season with more salt and pepper.
Serve with chopped Greek olives and crumbled feta cheese.
