Easy and delicious.

Heat the oven to 350 degrees.

Scrub 1 lb. of Beets under running water with a brush.

Slice the beets into half-inch thick rounds — if they are too thin, they’ll burn.  Cut the rounds into “fries” about the same width.

In a small bowl, toss the fries with 2 T.  olive oil and 1/2 T. salt.

Arrange the fries in a single  layer on a baking sheet.

Bake at 350 until the fries are lightly browned and crisp on one side, then remove from the oven and turn them once.

Return to the oven and bake another 5 minutes — they will cook quickly at  this point so take  care not to burn them.

Drizzle the pan with the juice of half a lemon — it should immediately sizzle —  and stir to combine.
