In addition to putting this on salads, you can drizzle it on tacos or falafel.
Wash 1 bunch of Cilantro and cut off the roots where they meet the stems (Cilantro roots can also be used as a seasoning). Chop the cilantro roughly and place in a food processor with 1 minced clove of garlic, the juice of 2 limes or 1 lemon, and 1/2 t. salt.
Add 1/2 C. plain yogurt (full fat is best).
Puree the mixture until smooth, then drizzle in 1/4 C. extra virgin olive oil with the processor running. Taste and add up to 1/2 t. honey if you like, and/or more salt. Thin with a little water if necessary.
