This simple and quick salad has just a few ingredients — it barely even qualifies as a “recipe” — but is addictively delicious and is a great way to use up any extra Painted Serpent Cukes you may have in your fridge. The exact flavor of the salad will change depending on the flavor of the tomato you use, so you can make different batches with different tomato varieties and compare.
Cut 1 large or 2 small, ripe tomatoes into large dice. Place in a small bowl and toss with a pinch of kosher salt. Toss to coat.
Thinly slice cucumber on a bias to make 2 C. of slices. Cut the slices in half lengthwise if you like. Place in a bowl and then add 1 t. Toasted Sesame oil, 1 t. soy sauce or tamari, and 1 t. rice wine vinegar. Toss to coat and allow to sit for 5 minutes.
Add 1 T. of olive oil to the bowl with tomatoes, then toss to combine it with their juices. Add the tomatoes and liquid to the cucumber bowl and toss well to combine along with a generous amount of coarse ground black pepper.
Taste and adjust the seasonings.
The salad is great on its own, but it is also nice with a small amount of dice avocado or arugula leaves. For additional sesame flavor, add 1 T. toasted sesame seeds just before serving.
