Trim 2-3 Zucchini, then use a mandolin or vegetable peeler to shave them into long, paper-thin strips.

Do the same with 2-3 Carrots.

Toss the shaved vegetables with 1/2 t. salt and 2 T. lemon juice and let sit for 10 minutes.

Meanwhile, separate the leaves of 1 head of Little Gem lettuce.  Soak them in a cold water bath, then rinse off the bases of each leaf.  Drain the dirty water and soak a second time.

Spin the lettuce dry, then tear the bigger leaves into 2-3 pieces.

Toss the lettuce with the zucchini and carrots  plus 1/2 C. of your favorite Caesar dressing or see recipe below.

Shave parmesan cheese to make 1/2 C. and sprinkle atop the salad.  Add fresh ground black pepper and more dressing to taste.

Easy Caesar Dressing:

Finely mince garlic to make 1 t. Combine with 2 T. lemon juice.  Whisk in 1 t. Dijon mustard, 1 t. Thai fish sauce, 1 C. mayonnaise, 1/2 C. grated parmesan plus salt and pepper to taste.
