Grilled Zucchini Roll-Ups
This is a quick-cooking appetizer that you can make in advance and serve while other stuff is cooking.
In another bowl, combine 4 oz. goat cheese with 1 small clove of minced garlic and a tablespoon of minced fresh herbs of your choice.
Use a mandolin or very sharp knife to cut 2-3 zucchini into long, very thin slices.
In a small bowl, mix 2 T. olive oil with salt and pepper.  Brush each zucchini slice on both sides, then grill on medium heat for just 2 minutes or so on each side.  Remove and allow them to cool.
Spread 1/2 t. cheese mixture on one side of each zucchini strip, then roll the zucchini up.  (With pattypan squash, you can make little sandwiches if it’s easier).
Arrange on a plate standing up.  Dice 1-2 tomatoes and put one or two pieces on each roll.  Sprinkle with balsamic vinegar.
