I know most people always cook asparagus, but when shaved this way it makes an unusual and tasty salad.
Trim the ends of 4-5 asparagus spears and then use a vegetable peeler to make long thin shavings.Â Do the same with 3 carrots.
Trim the leaves off 1 small spring onion and cut the remainder in half lengthwise.Â Slice the onion as thinly as possible, then cut the slices into 2 inch pieces.Â You want about 1 C.
Thinly slice 4 shittake mushrooms, either fresh or dried and hydrated with hot water for 10 minutes.
Make a dressing with 4 T. tangelo juice, 2 t. Dijon mustard, 2 t. soy sauce and 2 t. sesame oil.Â Taste and add lemon juice or rice vinegar if desired.
Toss the vegetables and mushrooms with half the dressing.Â Toast 1 T. or more of sesame seeds and sprinkle over the top.Â Allow to sit for 10 minutes then toss again.Â Taste, add more dressing if desired and serve.
